Recommendation for computer replacement?

I have had my setup for ten years and the Mac power tower just started having problems booting up. Does anyone have a recommendation for the best Mac product to replace my old workhorse? I know that I need at least 500GB SSD and 16GB RAM (better more, but how much more?), but what would be good? The Midiworks gentleman I spoke with didn't recommend a laptop, but suggested that I ask the forum. I often use Notre Dame de Metz, and I would like to access Salisbury Cathedral without waiting ten minutes for it to load.

Thank you very much for any recommendations you can make. I have gotten a lot out of the practice and recording features of this great system.

I use a 2012 MacMini with a standard drive which was able to accept 2 x 8 sticks of RAM and have never had to wait more than a minute or so for Salisbury to load. The latest MacMini can go beyond 16 GB RAM.
